What to Do in Phoenix
I've been going down to Phoenix for years, and will continue to do so, especially in the winter months. It's a cool town close to the most beautiful national parks in the U.S. (like the Grand Canyon!). Here's some of my recommendations I've collected over the years.
Transportation

Where to Eat
Japanese
Hai Noon is a Japanese restaurant by James Beard Award winning Chef Nobuo Fukuda. It's a casual izakaya-style spot with high-end food quality, serving yakitori, sushi, and other Japanese small plates. The restaurant has a cool 60's vibe and great cocktails.
French
Scottise is a French countryside inspired restaurant in the popular Roosevelt Arts District. You can get great wine and cocktails for a fun vibe that doesn't popular Roosevelt Arts District. You can get great wine and cocktails for a fun vibe that doesn't disappoint.
Mexican
Bacanora and/or Huarachis restaurants are both Mexican flavors by chef Rene Andrade. I recommend both because they're excellent in their own right, and different vibes. Take a look at the menus to decide which you'd prefer if your time is limited, but if you can make it to both, I recommend it!
Coffee Shops
Hidden Gem is a small coffee shop in the Papago Hotel, which is relaxed and has good coffee and small bites.
Futuro has a cool minimalist vibe and great coffee. It's in a good location and has a great menu of coffees.
Areas to Explore
In the City
Check out several areas in the city like Roosevelt Row Arts District, Heritage Square, Historic Grand Avenue.
Day Trips
If you want to venture out, go to the Sonoran Desert, drive about 3.5 hours to the Grand Canyon, or to Antelope Canyon (you'll need to book a tour ahead of time) is about 4 hours north.
